Ingredients
Wet
3 over-ripe bananas (1 extra one sliced for decoration)
3 eggs
1 tbsp. vanilla extract
1/2 cup melted coconut oil
Dry
1 cup almond meal
1/2 cup + 2 heaped tbsp. tapioca flour
1 tbsp. ground flax meal
1 tsp. baking powder
3/4 cup coconut sugar
2-3 tsp. cinnamon
1/2 tsp. mixed spice (optional)
1/2 tsp. nutmeg
Pinch of Celtic sea salt
Optional – 2tbsp. dark chocolate chunks
Directions
- Preheat oven to 180C / 350F
- Mash bananas with fork
- Whisk eggs
- Melt coconut oil + chocolate
- Combine all wet ingredients & stir
- Combine all dry ingredients; add to wet ingredients & stir
- Grease a loaf tin with coconut oil and pour the mixture in
- Add the sliced banana on top for decoration
- Bake in oven for 50-60 minutes (check after 35 minutes)
Insert a fork or toothpick – if it comes out clean, it’s ready!
