Banana Bread

Ingredients

Wet
3 over-ripe bananas (1 extra one sliced for decoration)
3 eggs
1 tbsp. vanilla extract
1/2 cup melted coconut oil

Dry
1 cup almond meal
1/2 cup + 2 heaped tbsp. tapioca flour
1 tsp. baking powder
3/4 cup coconut sugar
2-3 tsp. cinnamon
1/2 tsp. mixed spice (optional)
1/2 tsp. nutmeg
Pinch of Celtic sea salt

Secret ingredient – 45g of Chai Chocolate from Pana Chocolate
Find at: Flannery’s, Woolworths, Coles, Go Vita (check which store has the Chai flavour beforehand)

Directions
  1. Mash bananas with fork
  2. Whisk eggs
  3. Melt coconut oil + Pana Chocolate
  4. Add all wet ingredients together & stir
  5. Add all dry ingredients to wet ingredients & stir
  6. Pour into a lined loaf tin
  7. Add the sliced banana on top for decoration
  8. Preheat oven to 180 degrees celsius
  9. Bake in oven for 50-60 minutes (I take mine out after 35 minutes)
    Every oven’s heat & loaf tin size will be different

Insert a fork or toothpick – if it comes out clean, it’s ready!

Serve warm!
