Banana Bread

Ingredients

Wet
3 over-ripe bananas (1 extra one sliced for decoration)
3 eggs
1 tbsp. vanilla extract
1/2 cup melted coconut oil

Dry
1 cup almond meal
1/2 cup + 2 heaped tbsp. tapioca flour
1 tbsp. ground flax meal

1 tsp. baking powder
3/4 cup coconut sugar
2-3 tsp. cinnamon
1/2 tsp. mixed spice (optional)
1/2 tsp. nutmeg
Pinch of Celtic sea salt

Optional – 2tbsp. dark chocolate chunks

Directions
  1. Preheat oven to 180C / 350F
  2. Mash bananas with fork
  3. Whisk eggs
  4. Melt coconut oil + chocolate
  5. Combine all wet ingredients & stir
  6. Combine all dry ingredients; add to wet ingredients & stir
  7. Grease a loaf tin with coconut oil and pour the mixture in
  8. Add the sliced banana on top for decoration
  9. Bake in oven for 50-60 minutes (check after 35 minutes)

Insert a fork or toothpick – if it comes out clean, it’s ready!
